i need to start documenting more of my cooking journeys but i made a great quick vegetarian dish last week. it was a variation of my step-mother's dish and it tasted pretty good. i didn't really use any measuring cups for anything so use your own discretion. :)
1. MorningStar Original (not Prime *yuck*) Grillers
2. Red, green, and yellow bell peppers (sliced up)
3. Your choice of seasonings (black pepper, onion powder, paprika, etc.)
4. Soy sauce
5. Ketchup
6. Extra virgin olive oil (EVOO)
7. you can always add more veggies like onions, carrots, zucchini, etc.)
cut the grillers in halves or fourths (whichever works for you). mix the EVOO, ketchup, water and soy sauce in a large pan. don't put too much water because you want the sauce to be somewhat thick. put it all the other ingredients in the large pan, cover and let it simmer on medium heat for about 30 minutes.
simple, easy, and a hit at potlucks :)
